Simply Spanish is serving, as the name suggests, uncomplicated traditional Spanish food. They recently had a Moro Masterclass at their Bourke street venue where we learnt about the different varieties of Moro extra virgin olive oil and how to use that beautiful EVOO to create a traditional Valencia-style paella. Simply Spanish won ‘best paella out of Spain’ this year and we got to learnt from Leno Lattarulo himself on how to make a great paella.

We started with an olive oil tasting and learnt about the different varieties of Moro EVOO.

We started with some Iberico Jamon and marinated goat’s cheese dressed with the Moro frutal EVOO.

Leno showed us how to make and steam the chorizo dumplings. He used the Moro Primero in this dish because it had more of a pungent peppery flavour which complemented this well.

The steamed coral trout was cooked to perfection and flaked apart beautifully and the chorizo dumpling was delicate and flavourful.It was served with a zesty lemon yoghurt.

The beef cheek had intense flavours so they used the Moro Intenso EVOO which is great for when you’re slow-cooking or making a stew because it helps intensify the flavours. This slow cooked beef cheek was full of beefy flavour and was served on a creamy bed of potato mash.

The garlic prawns seemed so simple to cook but they were absolutely delicious. EVOO, garlic and chilli was all it was, mixed with the juicy sweet prawns,  amazing. We used the bread to soak up the rest of the sauce, so good.

At the start of the class they started cooking the Paella.

The smells of the Paella cooking were fantastic. By the end of the class the Paella was ready to eat.

The Paella was tasty, the rice was cooked aldente and the chicken and rabbit meat was tender. The rice was boiled and then fried at the very end to give it that dry charred flavour.

We ended with some Spanish donuts (churros). The churros were crisp on the outside and fluffy in the middle, dusted with cinnamon sugar and served with a sweet chocolate dipping sauce.
