If you’re familiar with Charlie Atlas and his restaurant Atlas Dining in Prahran you'll be super excited about his new restaurant 'Colours by Atlas'. It has a similar concept where the dishes are an expression of the inspiration of Charlie’s travels.

At colours they have five bowls to choose from with matching drinks which rotate over the year and each bowl embraces the flavours of a different country. The venue is down the road from Atlas dining but is a much more casual space for quick eats and takeaway. The finesse is not lost on this casual venture and while the atmosphere is informal, the quality of the food and balance of ingredients are exceptional. Each bowl takes you to a different country so all you have to decide is which country you want to eat at next.

The Israel bowl was colourful with beautiful purple beets, yellow stained cauliflower and bright orange Moroccan carrot. The pickled vegetables were sitting on top of a generous helping of creamy hummus and the minced charoset lamb was flavourful. It was topped with some fresh herbs like mint and dill and a pesto to add some freshness.

 The Vietnam bowl had a creamy meaty pate sauce with soft steamed chicken pieces that melt in your mouth. The shredded cabbage and pickled cucumbers were sliced so thin and evenly which makes a difference when your eating it. The pickles were sliced so thinly but were still so crisp. It had a sweet, sour, chilli nuoc mam dressing, Vietnamese mint and crispy shallots over the top. Great balance of flavours and textures.

The Mexican bowl had a tender strip of pork belly with a layer of epic crispy pork crackling. It had chunks of avocado, black beans and mashed black beans, corn, coriander and crunchy shredded tortilla crisps. All of those flavours you know and love.

They have drinks to match which also embrace the flavours of that country. We tried the Mexico one which like a homemade pineapple soda with lime and the cup was rimmed with chilli.

The Israel drink was a sweet lemony syrupy honey drink with mint.

We loved this place and felt like out tastebuds were transported to a few different countries in the one night. Can’t wait to try the other countries.
