Prospect espresso have a combination of new items on the menu and some classic dishes that have stuck around throughout the times. They cater for GF and vegetarian/vegan people which I think is important, especially when I’m choosing a place to brunch with a mixed bag of my special dietary friends (you know who you are). But whether you’re trying one of the oldies (like the strawberry lamington hotcake - my fave) or one of the newbies like the vegan Mac and cheese toastie, you’re in for a treat.

Started with a beetroot latte, it was nice and it was pink. So pretty.

Now I know when you were reading the intro that you were questioning how a Mac and cheese toastie could possibly be vegan. Well, the creamy cheese like sauce is actually a cashew cream and vegetable sauce huzzzah! Vegans rejoice. Not only is it vegan, it’s also super delicious. The macaroni is not too soft and they really pack that toastie full of filling between two slices of crunchy garlic toast. with a side of Chinese broccoli. It’s a goodie.

The smashed pumpkin was a good vegetarian option too. The pumpkin was full of flavour and served with a crumbly almond feta cheese, grilled eggplant, broccolini, pomegranate and dukkah on a slice of sourdough multigrain.

The corn and haloumi fritters are delicious. The little fried fritters had a light texture and was served with roasted garlic hummus. This plate had lots going on that alll worked together. There was the quinoa, herbs, lime shallot dressing which gave the dish a freshness, the pops of sweet pomegranate were lovely, the roasted cauli had a nice char, haloumi, yasss more halloumi and poached egg.

The hash stack is everything you want after a big night drinking. Or any other day too. My plate was piled high with crispy bacon. The housemade hash brown is a giant circular patty of soft potato, fried and golden on the outside. Then if that wasn’t indulgent enough it came with a creamy dijonnaise, pickled onions, poached eggs and tomato relish on sourdough toast. Pretty epic.

The sriracha benedict burger had a spicy sriracha hollandaise poured over a fried egg, bacon, haloumi, baby spinach, roasted mushrooms. Kind of like a breakfast burger with a spicy sriracha hollandaise kick.

The panko fried chicken fillet was crispy on the outside and juicy in the middle. It was served fresh tomato, cos lettuce, a zingy chipotle mayo and a side of fries. Most things are better with a side of fries.

The strawberry lamington hotcake is a fantastic sweet dish. It is one mega soft fluffy hotcake topped with white chocolate crumble, vanilla mascarpone, toasted almonds and fresh berries. The edges were soaked a little with the strawberry coulis and topped with desiccated coconut which made it taste a lot like a strawberry lamington. Warning: this hotcake is huge and filling, so best to share, I say.

And then there was the Belgian waffles. They had a lovely crunchy on the outside and came with a blueberry compote, white chocolate praline, fresh berries, a bright green matcha poached pear and hazelnut crumble. Yum.
I heart Prospect Espresso!
