Have you ever had a tarte flambee? It’s like a French style pizza with an ultra thin crisp base with quality inspired toppings from Northern France. Pair that with a good glass of French wine and you’re in for a good night. Windsor is becoming a hotspot for awesome places to eat and drink and this is another winner to add to the list. When fine ingredients are placed on a buttery crisp base and cooked in a woodfire oven, how could it be anything but delicious? It left me wondering why I hadn’t tried a tarte flambee before. No matter, I’ve discovered it now and will be eating it regularly to make up for lost time.

The first tarte flambee we tried was the ‘traditionelle gratinee,’ which had lardon smoked bacon, emmental cheese and onion. Classic flavours to start with, each bite full of indulgence.

The next flavour combo was genius. It was a creamy Bleu d’Auvergne cheese with vanilla poached pear and rocket salad. Few ingredients but packed with flavour. These simple food pairings make all the difference and create delicate and exciting flavours.

The ‘A la Peche’ had chunks of salmon, dried raisins, red onion and a wedge of lemon to squeeze on top. This was an interesting combination that was beautifully balanced. I loved the oily salmon with red onion, the sweet raisins and the freshness of the lemon. Who knew these flavours were so good together.

The quality of the cheeses and ingredients used are the finest of produce, which really makes all the difference. Next up was buche de chevre goats cheese, prunes, pine nuts, thyme and honey. This was considered a savoury tarte flambee but it had a marvellous sweetness interacting with each of the savoury flavours.

Lastly for the savoury pizzas, we had ‘la top’ which was carved beef steak (perfectly pink in the middle) with mixed salad, housemade vinaigrette and parmesan. This one was a little more filling than the others with the slices of steak.

The ‘blueberry smashee’ was the prettiest one with smashed blueberry & mint on a sweet tarte flambee. Simple ingredients but the flavours were bang on.

The next tarte flambee came out en flambé. The traditional method of using calvados apple liquor was lit on fire in front of us at the table. A bit of theatre is always fun. It was a sweet base with thinly sliced apple and cinnamon sugar with a sweet bruleed flavour from the flames.

And lastly ‘la choconnana’ which is pretty self explanatory. The choco was nutella and the nnana was slices of banana sitting on a buttery sweet tarte flambee. This was delicious obviously.

I love that each tarte flambee has a minimal amount of ingredients so the base remains crispy and it’s easy to eat with one hand, especially considering you have a wine glass in the other hand. If you haven’t tried tarte flambee, now is the time and Restore Bobo is the place.
